Creamed Spinach
- 2 T. olive oil
- 4 cloves garlic, minced
- 1 lb. frozen, chopped spinach
- 4 oz. cream cheese
- 1/3 c. grated Parmesan cheese
- 1/4 t. ground nutmeg
- 1/2 t. black pepper
- 1 t. salt
- 1/4 c. milk, as needed
2. Add the cream cheese, Parmesan cheese and seasonings. Stir and cook until cheeses are completely melted. Thin to desired consistency with milk, a few splashes at a time.
3. Serve immediately. Or, for stolen moments style, transfer to a small casserole dish and refrigerate. Bake at 350 degrees for 15 minutes, or until heated through.

yum---I even have some spinach that I bought fresh and froze--would be great for this!

I saw this post yesterday and decided; "YUM! That is what I'm making for dinner tonight". So, I did. Turned out rather yummy. MY Hubby absoulutly loves his greens...
One thing, I think It may have had too much garlic. I didn't have any fresh and used dried instead. I don't know... I'll have to try it again. Also, I didn't think I had enough spinach to make 1lb. So, I added about two cups of frozen, shredded zucchini to it. Nobody knew and it (same color)and it was a good way to use it up - get it out of the freezer. Thanks for the great meal idea. Love your blog!
