Ground Beef Stroganoff

We are fortunate to have children that are not very picky eaters. Honestly, we haven't given them much room to be picky. But even knowing that, I will admit the kids do have some definite favorites. Skillet meals that are similar to a Hamburger Helper-type meal definitely top that list.

This ground beef stroganoff always goes over well, even with the kids that aren't big fans of onions or mushrooms.
Ground Beef Stroganoff
  • 1 lb. ground beef
  • 1 large onion, diced
  • 1/2 lb. mushrooms, diced
  • 3 cloves garlic, minced
  • Salt & pepper, to taste
  • 1 t. Italian seasoning
  • 3 T. flour
  • 1 1/2 c. beef stock
  • 2 t. red wine vinegar
  • 1 c. sour cream
  • 1/2 lb. egg noodles, cooked and drained
1. In a large skillet, add ground beef, onion, mushrooms and garlic. Cook until ground beef is completely browned, about 8-10 minutes. Add salt and pepper to taste, and Italian seasoning. DO NOT DRAIN.

2. Stir in flour and cook for 2-3 minutes. Slowly add beef stock and red wine vinegar. Stir, bring to a boil, and let simmer until thickened.

3. Stir in sour cream until combined. Add noodles; mix well. Remove from heat.
